Juicy mouthfeel. Notes of blackberry and currants. Well-balanced and not too acidic.

Brew Steps:

1. Heat water to 93 c.
2. Add 50 g of water for the bloom, stir
3. Bloom for 30 seconds
4. Slowly pour remainder of water (to 250 g total)
5. Cap and let steep until 1:30
6. Flip and slowly press.
